Devon King's' Battered Yam

I follow Devon King's on Facebook and I totally love their Nigerian kitchen tips and recipes. It's so practical and refreshing. I stumbled on this and promised I would share on my blog. It's a very simple recipe,  a lazy go-to breakfast.  Here we go:


4 slices of yam
3 eggs
4 tablespoons flour
½ teaspoon salt
1 teaspoon dried pepper (½ for flour and ½ for egg mixture)1 seasoning cube
Devon King’s Vegetable Oil for frying

1) Cut out and peel 4 slices of yam from the tuber in your preferred shape and size.

2) Wash thoroughly, place in a pot. Add water to cover it a bit, add the salt and parboil. Drain the water when yam is half cooked.

3)Add the flour, pinch of salt and 1/2 teaspoon of dried pepper into a bowl and mix together. Beat the eggs in another bowl with the other half of the dried pepper and seasoning cube.

4)Gently take a piece of parboiled yam from the pot, dip in the egg mixture, then coat in the flour mixture and dip back into the egg mixture.

5)Deep fry in Devon King’s Vegetable Oil and drain on a paper towel.

Enjoy with salsa ( ) or stew.
